Baked Eggs in Tomato Sauce

Lately I've been sleeping more and more, so I haven't really done much work. That's a bit of a worry since I'm only 2 weeks away from my deadline, so I really need to focus on studying. Unfortunately that means I have less time to cook.

This recipe is a very quick and simple dish, it tastes great. I didn't think it through properly before making it though, so I put everything together in the pan which meant that on the plate it looked hideous. I forgot to take a picture of it on the plate before eating the whole thing at once, since it tasted so good. (Edit: Apparently I didn't forget, I just forgot that I took the pictures. They have been added in now).

Baked Eggs in Tomato sauce

  • 1 Portion of tomato sauce ( Recipe for tomato sauce or you can use a store bought pasta tomato sauce ).
  • 1 Egg
  • 1 Portion of pasta ( or bread, chicken or some crunchy vegetables, really this recipe works with a lot of things. ).
Cooking Directions
  1. Cook the pasta (if using) according to the instructions on the packet.
  2. Preheat the oven to about 180 C.
  3. Heat the tomato sauce thoroughly.

  4. Crack the egg into the middle of the sauce and poach for about 2 minutes.
  5. Put the pan with the sauce into the oven.
  6. Bake until the egg is no longer see-through.
  7. Serve the pasta on the plate, then spoon the sauce with the egg whole onto the top of the pasta.

When I made it, I put the pasta into a casserole dish, then poured the sauce on top before putting it in the oven. The outcome is the same, but it didn't look as pretty. (Edit: Finally added the pictures I found on my camera of it). While it didn't look so great because of my poor presentation skills, it really did taste amazing.

I finally have a little bit of money, so I can start making more food again. In the meanwhile, here is a picture of a typical glass of tea for me. It's a pint of tea, saves me making a few cups of tea.
